自身が扱わせて頂いている豆はケニアやエチオピアなどで作られたもので所謂スペシャリティ ーコーヒーに属する。COE の仕組みが出来るまで高度経済成⻑の大量生産、大量消費の時代に経価相場商品である珈琲 は量と低価格を至上としたために品質はそこそこに生産者の収入と地位は低下して消費者が遠 のいていった。COE の仕組みができその質は格段に上がり手間暇かけて作られたものに対してはそれ相応の対価 を払うという事がようやく実現されてきた。
しかし一個人の実感として珈琲を最終的に消費させて頂いている私たちが正当な対価を現地の 生産者たちに支払えているかと言われればそれにはまだ程遠いと感じる。コーヒーを作ってくれている遠い国の人たちの存在があるらこそ珈琲屋が存在できるわけで私 たちが美味しい珈琲を愉しむ事ができる。まだその関係はイコールではなく珈琲屋をやらせて頂く身においてその関係性がより良い方向 に向かう事ができる様に何ができるか。まだ若輩者の自分にはその明確な答えは見えていないが、いざという時に何かできる様、遠い国 の人たちと共に進んでいける様、その時のために使える様に貯金箱に入れている。

Until the establishment of the COE system, coffee was a commodity in the era of mass production and mass consumption with the rapid economic growth. With the establishment of the COE system, the quality of coffee has improved dramatically, and people are finally willing to pay a reasonable price for the time and effort that goes into making it.
However, as an individual who consumes coffee, I feel that we are still far from being able to pay a fair price to the local producers. It is because of the existence of people in distant countries who produce coffee that coffee shops can exist and we can enjoy delicious coffee. As a coffee shop owner, I have to ask myself what I can do to make the relationship between the two go in a better direction. As a young person, I don’t have a clear answer to this question, but I am putting it in my savings account so that I can do something when the time comes, and so that I can use it to move forward together with people in distant countries.
